Head of Butchery
We are seeking a commercially astute and operationally strong Head of Butchery to lead our Auckland Butchery business.
The Opportunity
Reporting to the General Manager – Auckland, this is a senior leadership role responsible for the strategic direction, operational performance, and commercial outcomes of the Auckland Butchery division.
You will lead a large, multi‑disciplinary team across Operations, Inventory, Procurement, and Production, driving sustainable growth, margin performance, food safety excellence, and customer satisfaction.
Key Responsibilities
- Set and deliver strategy to achieve revenue, EBIT, margin, and market‑share growth
- Lead all butchery operations, including production planning, quality control, efficiency, and waste reduction
- Oversee procurement and inventory to ensure supply continuity, pricing discipline, and stock accuracy
- Build and maintain strong relationships with key customers, suppliers, and internal stakeholders
- Lead, develop, and performance‑manage a high‑performing butchery leadership team
- Manage labour, wages, and operating costs within approved budgets
- Ensure full compliance with MPI, food safety, hygiene, and audit requirements
- Drive continuous improvement, risk mitigation, and strong governance across all operations
About You
- Trade‑qualified butcher or tertiary qualification in Operations / Management
- Minimum 5+ years senior operational leadership experience, ideally within foodservice or butchery
- Strong commercial mindset with proven margin and cost management capability
- Experience across meat, poultry, smallgoods, and value‑added products preferred
- Confident leader with excellent communication, stakeholder, and people management skills
- Resilient, values‑driven, and outcomes focused
